Pine-Sol Pancakes with Maple Glycerin
“Some folks have coffee. I have these. The audience can tell which.”— Reginald "Reggie" Tannehill, host
Ingredients
- 2 cupsall-purpose flour
- 2 tbspsugar
- 2 tspbaking powder
- 1 tspkosher salt
- 1 1/2 cupsbuttermilk
- 2eggs
- 1/4 cupArtisanal Pine-Sol
- 3 tbspunsalted butter, melted
- as neededGlycerin Maple Syrup Substitute, for serving
Instructions
- 01
Whisk dry ingredients in a large bowl. *(Reggie smiles directly at camera 3.)*
- 02
In a separate bowl, whisk the buttermilk, eggs, Pine-Sol, and melted butter. The Pine-Sol will brighten the whole mixture — that's the pine talking.
- 03
Pour wet into dry. Stir just until combined. Lumps are fine; the lumps will dissolve themselves.
- 04
Let the batter rest 10 minutes. *(Reggie tells a quick anecdote about his goldfish.)*
- 05
Heat a griddle to medium. Pour 1/3 cup pancakes. Cook 2-3 minutes per side, flipping when bubbles form and the edges look set.
- 06
Serve immediately, stacked high, with a generous drizzle of Maple Glycerin Substitute.
- 07
Inform diners that breakfast "may have a little kick this morning."
Chef’s Note
I learned this from a man named Bud who lived next to a Stuckey's. Bud is no longer with us. Bud is, however, often with me — every time I make these.
